Grilled Brie With Roasted Cherries Recipe
My golly, talk about a show stopper. Of course, there are so many possibilities for this idea. Nice smokey, warm, gooey cheese topped with a flavor bomb of fruit—winning. Imagine plums roasted in balsamic or a blackberry salsa with herbs… Take this idea and run.
If you do not have a grill, you can also do this inside on a griddle pan.
Ingredients
1 brie wheel
olive oil
2 handfuls of cherries | pitted
a pinch of flakey salt
Infused honey | for drizzling—I used this thyme-infused honey, though chili-infused honey would also be delicious here!
Instructions
Step One
If you already have your infused honey on hand, continue on—however, if you need to make that, go ahead and do that first.
Step Two
Preheat your grill.
Step Three
Add the cherries and a little olive oil to a small skillet. Cook until the cherries begin to release their juices and have taken on a nice color, about 5-7 minutes. Remove from the heat.
Step Four
Rub the brie wheel with a little olive oil and sprinkle with salt. Place it on the grill. Grilled each side for 3-4 minutes until the brie is well warmed and has beautiful char marks. Be very careful when flipping the cheese wheel, you definitely do not want to break it open. Remove from the grill and place on your serving dish.
Step Five
Top the grilled brie with the cherries. Season with a sprinkle of salt and a nice drizzle of your infused honey. Serve. Enjoy.
