Hong Kong Style Egg Sandwich Recipe
I believe Lucas Sin nailed this. The egg is custardy, stacked in cloud-like layers. Simplicity and deliciousness at its best.
In this recipe - he also calls out some variations you can throw at this recipe - I have not tried them yet, but I can’t wait to get to the kitchen and give them a go.
My only complaint is that he does not cut the sandwiches on a diagonal. I will forever be a three-year-old in this way. Triangle sandwiches taste better.

1 teaspoon neutral oil, plus more for the pan
1 teaspoon potato starch
