Rhubarb Infused Gin

Rhubarb Infused Gin

For spring influenced gin & tonic

Note: The brilliant pink color does tend to fade, though it simply encourages you to drink it sooner, and I have never had a problem with that :-)


Ingredients

2 pounds red rhubarb stalks

2 cups white sugar

4 cups gin


Instructions

Step One

Wash the rhubarb well and slice it into 1/2 inch pieces. In a large container with a lid mix the cut rhubarb with the sugar. Make sure the sugar is well distributed throughout the rhubarb. Let it sit for 24 hours.

Step Two

Add the gin. Stir well. Let it sit in a dark cool place for 4 weeks. Every once in a while take a look at it and see if it needs a quick stir.

Step Three

Drink. Enjoy.
