Sesame Ginger Cucumber Salad

Lightening fast and refreshing

This salad is perfect for hot summer days and it comes together in a flash.


Ingredients

Salad

cucumber | sliced thinly lengthwise on a mandoline or by hand

a healthy sprinkling of toasted sesame seeds

a pinch red pepper flakes | to your heat preference

green onions | chopped

Dressing

1 inch of fresh ginger | peeled and minced

1 lime | juice and zest

1 teaspoon sesame oil

2 tablespoons olive oil

1 tablespoon soy sauce


Instructions

Step One

Make the dressing. Add all of the ingredients to a bowl and whisk until emulsified.

Step Two

In a large bowl, add the cucumbers and red pepper flakes, and then toss with the dressing. Let sit for 15 minutes to marinate. Top with the sesame seeds and green onions. Serve. Enjoy.
