Root Vegetables: Long-Term Storage Tips

Root vegetables are the unsung heroes of the CSA box. Hardy and versatile, they can last for weeks or even months when stored properly. Here’s how to make the most of these staples.

General Tips for Root Vegetables

  1. Keep Them Cool: Most root vegetables prefer cool, dark, and slightly humid environments. A root cellar is ideal, but a refrigerator crisper drawer can work well for many.

  2. Remove the Greens: If your root vegetables come with leafy tops (like carrots or beets), cut them off before storing. The greens draw moisture from the roots, causing them to dry out more quickly.

  3. Majority of the Time Avoid Plastic Bags: Store roots in a breathable bag or container. Plastic bags can trap moisture, leading to mold and spoilage.

  4. Separate Ethylene-Sensitive Roots: Some root vegetables, like carrots and potatoes, are sensitive to ethylene gas produced by fruits like apples. Store them separately to prevent premature aging.

Storage Solutions for Specific Roots

  • Carrots: Store in a sealed container or plastic bag lined with a damp paper towel in the refrigerator. This helps maintain humidity and prevents them from drying out.

  • Beets: Beets store well in a loose bag in the crisper drawer. Don’t wash them until you’re ready to use them.

  • Radishes: Remove greens and store the radishes in a bowl of water in the refrigerator to keep them crisp.

  • Potatoes: Keep them in a cool, dark, and well-ventilated place. Avoid storing them near onions, as the gases they emit can cause spoilage.

  • Turnips and Rutabagas: Store unwashed in the refrigerator crisper drawer or a cool basement. They can last for weeks when kept cool and dry.
