Storage Tricks: Leafy Greens: Tips for Crisp and Fresh Greens
Leafy greens are among the most delicate and perishable items in your CSA box. With the right care, however, you can keep them fresh and crisp for a week or longer.
General Tips for Leafy Greens
Wash Before Storing: For most greens, it’s best to wash them right away. Rinse in cold water to remove dirt and debris, then gently pat dry or spin them in a salad spinner. Excess moisture can lead to wilting or rotting, so ensure they are as dry as possible before storing.
Store in Breathable Bags: Use perforated or breathable bags, or sometimes I’ll just leave the plastic bag open and store greens in the crisper drawer of your refrigerator. This allows for airflow while maintaining the right level of humidity to keep them fresh.
Add a Damp Paper Towel: For extra freshness, place a damp paper towel inside the bag with your greens. This helps maintain optimal moisture levels without making them too wet.
Storage Solutions for Specific Greens
Lettuce: Store them in a breathable bag or container with a damp paper towel.
Spinach and Arugula: These tender greens should be kept in a sealed container lined with a paper towel to absorb excess moisture.
Kale and Swiss Chard: These hardier greens can last longer if stored unwashed in a plastic bag. When ready to use, wash and pat dry.
Herbs (Cilantro, Parsley, etc.): Trim the stems and place them in a jar with an inch of water, like a bouquet. Cover loosely with a plastic bag and refrigerate.
Extra Tips for Longevity
Avoid overcrowding your greens in storage, as this can lead to bruising and quicker spoilage.
If greens start to wilt, revive them by soaking in a bowl of ice water for 10-15 minutes.
Plan meals around more delicate greens earlier in the week to use them before they spoil.
