Easy and adaptable, this is almost more of a concept than a recipe.

Ingredients

1/2 cup olive oil

1/4 cup vinegar | I typically use white wine vinegar or an aged sherry vinegar

the juice of half a lemon | freshly squeezed

1 tsp Dijon mustard

1 tsp honey

half a clove of garlic |. finely minced

pinch of salt

fresh cracked pepper

Instructions

Step One

Add all of the ingredients to a mason jar (or you could do this in a bowl with a whisk). Screw on the lid of the jar and shake vigorously until thoroughly combined. Taste. Adjust seasonings. Enjoy.
