Cherry Crisp

A little sweet and a little sour

I love me the combination of sweet and sour cherries. It brings more balance to the bite than just the cloying sweetness that cherry can sometimes turn into. I also am a mad fan of that golden delicious topping. So you might look at this recipe and think, my golly gracious woman, will there be any room left for my filling? And you wouldn’t be wrong - but this is how I like it, and maybe you will too.


Ingredients

Cherry Filling

5 cups cherries | a mix of sweet and sour cherries - pitted

1/2 cup sugar

2 tablespoons cornstarch

Topping

1 cup brown sugar

12 tablespoons all-purpose flour

12 tablespoons unsalted butter | melted

1 cup old-fashioned whole-rolled oats

a handful of almonds | optional, chopped


Instructions

Step One

Preheat the oven to 350. Lightly grease your baking dish.

Step Two

In a small pot on the stove, combine all of the cherry filling ingredients. Over medium heat, stirring often, cook the mixture until it begins to thicken. Remove from the heat.

Step Three

In a large bowl mix all of the topping ingredients until crumbly but well combined.

Step Four

Pour the cherry filling into the prepared baking dish. Sprinkle with the topping. Bake 40 - 45 minutes until the topping is golden brown. Remove from the oven, let cool. Serve. Enjoy.
