Kofta Kebabs

Grilled, spiced, and delicious

This is more of a process than an exact recipe. Feel free to play. Get fancy with your spices.


Ingredients

ground meat | could be beef, lamb, goat, or even a mixture

onion | finely minced

2 egg yolks

fresh herbs | a mix of parsley, cilantro, and mint

spices | smoked paprika, cumin, cayenne, sumac, garlic powder

salt

pepper


Instructions

Step One

Preheat the grill. In a bowl, mix all of your ingredients together. If you are unsure if you are happy with your meat mixture, feel free to cook a little tiny bit in a skillet to try. Adjust seasonings. Let sit for 30 minutes.
* If you are using wooden skewers - use these 30 minutes also to soak your skewers in water so they won’t burn on the grill.

Step Two

Take a small handful of meat and roll it into a long sausage shape. Insert the skewer.

Step Three

Add a bit of oil to a paper towel and wipe down the grill grates (hopefully helping to prevent the kofta from sticking). Grill until done. Serve hot. Enjoy.
