English Pea Toast

English Pea Toast

Green globes of deliciousness

I remember as a little girl sitting in the sink helping my mother shell peas. It is one of my favorite memories. Fresh peas from the garden are nothing like the gross green things that come from a can. Still to this day, if I have a bunch of peas to shell I will sit upon the counter with my back against the cabinets and my feet in the sink shelling these little green globes of deliciousness. It is one of my happiest places.


Ingredients

4 cups fresh English peas | shelled

3 green onions | thinly sliced

1 bunch of mint | leaves only, thinly sliced

a handful of chives | thinly sliced

a glug of olive oil

1/2 lemon | to use for zest and juice

bread | thick slices

1 clove garlic

goat cheese | or any soft cheese of your choice

salt

pepper


Instructions

Step 1

Mix your peas, green onions, mint, chives, lemon zest, lemon juice, and a glug of olive oil in a bowl. Sprinkle a bit of salt over the ingredients. Mix to incorporate then let sit.

Step 2

Either grill or toast your thick bread slices on both sides. Once toasted, rub your fresh clove of garlic across the top of your toast as you would grate cheese across a grater.

Step 3

Assemble your toasts. Spread your cheese and then top your toast with the pea mixture. Try to get most of the peas to stick to the cheese so they don’t go running off everywhere. Enjoy.
