Fried Green Tomatoes

Straight from my childhood

As the mornings become more crisp, and the hint of fall is in the air - I always start to crave these. No dish is more nostalgic for me than fried green tomatoes.

Ingredients

Green tomatoes | firm, sliced into 1/2-inch steaks

2 eggs | well-beaten

1 cup cornmeal

4 tablespoons smoked paprika

a couple of dashes of garlic powder

chili powder (to taste)

a pinch of salt

oil for frying

Instructions

Step One

In a small bowl combine the cornmeal, smoked paprika, garlic powder, chili powder, and salt - mix well. Then pour that spiced cornmeal onto a flat plate big enough to bread your tomatoes with ease. Pour your well-beaten eggs into a wide bowl big enough to put your tomato slices in with ease.

Step Two

Here is the process: Dip a tomato slice into the egg, and coat both sides - then transfer to the spiced cornmeal and coat both sides. Set aside, and continue until you have breaded all of the tomatoes.

Step Three

Add the oil to a large fry pan. Heat over medium-high heat until the oil begins to shimmer. Drop your breaded tomatoes into the pan. Cook until golden brown on each side, about 3-4 minutes on each side. Remove from the oil, let drain on a paper towel or rack. Serve hot. Enjoy.
