Rustic Peach Galette

A simple classic

A true classic. Don’t be afraid of a little color on the crust. Color is flavor.


Ingredients

crust | either store-bought or homemade

peaches

sugar | adjust to your preference. If your peaches are super sweet, use less.

a dash of lemon juice

a pinch of flour

1/2 teaspoon cinnamon

1/2 teaspoon vanilla

a tiny pinch of salt

1 tablespoon butter | unsalted, cut into small pieces

1 egg | beaten for the egg wash

coarse sugar | for the edge


Instructions

Step One

Preheat the oven to 425 degrees. Meanwhile, in a small bowl toss the peaches with the sugar, lemon juice, flour, cinnamon, salt, and vanilla.

Step Two

On a baking sheet go ahead and roll out your dough into some sort of roundish shape. Lay the peaches on the inside of the dough leaving a 2-inch border of crust. Discard any extra peach juices. Fold the edges of the galette up and over the edges of the peaches. Top the peaches with the pieces of butter. Brush the crust with the egg wash and sprinkle on the coarse sugar.

Step Three

Bake for 20-30 minutes until the crust has good color. Remove from the oven. Let cool for 15 minutes. Serve. Enjoy.
