Green Gem Kale Salad Recipe

Green Gem Kale Salad

A bowl of green goodies

This is a great side salad, or if you are looking to serve this as the main course, feel free to add some grilled chicken or seared tofu to make it more substantial.


Ingredients

Salad

1 large bunch of kale | chopped

1 clove garlic | minced

1/2 inch of fresh ginger | grated

2 teaspoons olive oil

2 teaspoons toasted sesame oil

a pinch of salt

Toppings

a healthy sprinkling of sesame seeds

1/4 cup green onions | sliced

avocado | cubed

edamame beans | pre-cooked

a small handful of pumpkin or sunflower seeds

Dressing

2 teaspoons soy sauce

1 tablespoon rice wine vinegar

pinch of red chili flakes

salt and pepper | to taste


Instructions

Step One

In a large bowl, add the kale, garlic, ginger, olive oil, toasted sesame oil, and salt. Using your hands, massage the ingredients until the kale is softened.

Step Two

Made the dressing. Combine all of the ingredients and whisk until emulsified.

Step Three

Toss the salad with the dressing. Divide among the serving bowls. Add all of the toppings. Serve. Enjoy.
