Onion Bhajis Recipe
Ultra crispy and utterly addicting - get ready to fall in love.
Ingredients
2 large onions | thinly sliced
2-5 Thai chilies | adjust for preference, thinly sliced
half a bunch of cilantro | roughly chopped
1/2 teaspoon baking powder
1 cup chickpea flour | or you can sub all-purpose if you are in a pinch
1 teaspoon salt
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
enough water to make a thick batter
oil for frying | neutral flavored like canola or vegetable oil
Instructions
Step One
In a large mixing bowl combine the flour, baking powder, salt, turmeric, and cumin and whisk until well combined.
Step Two
Add in the Thai chilies, and cilantro, and mix well.
Step Three
Add enough water to make a thick batter - the amount of water will vary depending on which type of flour you are using.
Step Four
Add in the onions and use your hands to toss the onions until thoroughly coated in the batter.
Step Five
Heat about 1 inch of oil in a pan until it reaches 350 degrees. Once at temperature, add mounds of the onion batter, making sure to not overcrowd your pan. Fry until golden brown and delicious on each side.
Step Six
Once the Bhajis are golden brown and ready, remove them from the oil and place them on a draining rack. Season with a tidbit of salt. Serve hot. Enjoy.
