Simple yet satisfying

Simple yet satisfying. I particularly enjoy eating this cold on a hot summer afternoon.

If you can, making a homemade dashi stock is worth the effort - I find it less harsh and more pleasant than rehydrating the store-bought powdered version. Also, adjust the recipe cooking time for the size of your daikon - only cook until tender.


Ingredients

daikon radish

4 cups dashi | homemade if possible, or powdered*

2 tablespoons soy sauce

1 tablespoon mirin

1 tablespoon sake

*note: If using powder: mix 4 cups water + 2 teaspoons dashi powder
