Garlic Soup
Will leave your kitchen smelling amazing
There is so much flavor in this bowl. There is enough umami in each spoonful that I would swear there had to be mushrooms or some other secret ingredient - but there isn’t. The slow sweat of the onions and garlic does wonders to the complexity of this soup - plus as a bonus, leaves your kitchen smelling incredible.
Ingredients
2 tablespoons olive oil
2 tablespoons butter
2 pounds onions | chopped
2 cups garlic cloves | chopped
2 quarts chicken stock or broth
1/2 loaf day-old French bread | cut into chunks
1 bouquet garni | small bunches of parsley, thyme, and a bay leaf
1 1/2 teaspoons kosher salt
2 cups half-and-half
1/4 teaspoon freshly ground black pepper
