Stone Fruit Tartlets Recipe
These come together in a pinch - they are quick, easy, beautiful, and delicious. What I enjoy most about them is that they are so adaptable and are the perfect vehicles to showcase whatever fruit is currently in season.
Ingredients
Stone fruit | try peaches, plums, apricots…
2 tablespoons honey
1 teaspoon lemon
a couple sprigs of thyme | de-stemmed
puff pastry
1 egg | well-beaten
course turbinado raw sugar
Instructions
Step One
Preheat the oven to 400 degrees.
Step Two
Toss your fruit with the honey, lemon, and thyme. Leave to macerate for 10 minutes.
Step Three
Cut your puff pastry into rectangles. Top with the fruit mixture. Brush the exposed puff pastry with the beaten egg. Sprinkle with the course raw sugar.
Step Four
Bake for 10-12 minutes until the pastry is nice and golden brown. Serve. Enjoy.
