“Aigo Boulido” Broth

Get ready to be caught of guard

Often we are used to using oil based sauces for dipping bread - this however, is a completely different beast. Flavorful and intense, yet clean feeling, light, and refreshing. Delicious served with a loaf of crunchy bread or cheesy toasts.


Ingredients

12 garlic cloves | peeled and crushed

10 bunches of sage

1 leek

a handful of mushrooms

6 cups of water

4 tablespoons olive oil


Instructions

Step One

In a pot combine the water, mushrooms, leek, sage, and garlic. Bring up to a simmer and cook for 5 minutes. Remove the pot from the heat and pour the olive oil on top of the broth. Let steep for 10 minutes. Serve. Enjoy.
