Summer Parsley Salad Recipe
In that summer heat, when it feels too hot to eat - this salad is my go to. Light but hearty, simple but delicious.
Ingredients
Salad
tomatoes | cubed
cucumbers | cubed
Peppers | chopped
1 bunch of parsley | stems removed, chopped
feta
garlic | finely grated
salt | to taste
Dressing
1/4 cup olive oil
1/4 cup rice wine vinegar
juice of a whole lemon | freshly squeezed
1 tablespoon honey
salt | to taste
Instructions
Step One
Combine all of the salad ingredients into a bowl. Toss well. Let sit for 30 minutes.
Step Two
Meanwhile, make the salad dressing. Combine all of the ingredients and whisk vigorously until well-combined.
Step Three
When you are ready to serve, add the dressing to the salad and toss well. Taste. Adjust any seasonings. Serve. Enjoy.
