Sunny-Side Up Egg Crepes

Sunny-Side Up Egg Crepes

Little packages of deliciousness

More of a set of guidelines verse a true recipe—these little buckwheat “packages” can hold anything your tummy desires.


Ingredients

Crepe | see recipe here

a handful of cheese | your preference, some of my favorites are goat, feta, or gruyere

a handful of fresh greens | an especially good with spinach or kale

1 teaspoon butter

1 egg

thin slices of prosciutto or cooked bacon

herbs | chopped - Whatever you have on hand, my go-to is a mix of dill, basil, and chives

red pepper flakes | to preference

salt and pepper


Instructions

Step One

Preheat the oven to 350 degrees.

Step Two

On a lightly greased baking sheet build your crepes. Layout your crepe, top with cheese, prosciutto, and greens. Add the little pat of butter. Crack an egg into the center of the crepe and fold the edges up towards the middle to enclose the fillings.

Step Three

Bake for 9 - 11 minutes until the eggs have just set. Remove from the oven and top with the freshly chopped herbs, and season with red pepper flakes, salt, and pepper.
