Thai Cucumber and Daikon Salad

Stunning with such a beautiful crunch

This beautiful salad is a perfect compliment to any grilled chicken or veggie. Bright, clean, and oh so crunchy — it hits just right on a summer day.


Ingredients

Salad

cucumber | sliced

shallot | sliced

daikon | sliced

1-3 Thai chilies | depending on your heat preference - sliced thinly

A handful of cilantro or Thai basil | roughly chopped

Dressing

1/3 cup white vinegar

1/4 cup sugar

1 teaspoon salt


Instructions

Step One

Combine the vinegar, sugar, and salt in a small saucepan over medium heat. Bring to a simmer, and then stir until the sugar and salt have fully dissolved. Remove from the heat. Cool until room temperature.

Step Two

Prep all of the salad ingredients and toss with the cooled dressing. Taste. Adjust seasonings. Serve. Enjoy.
