Acacia Flower Fritters Recipe
Spring means acacia trees heavy with their beautiful blossoms. Delicate, beautiful, and the flowers are completely edible. This is a meal where nothing can be done ahead of time. The flowers are best picked right before you plan to fry them and they must be eaten almost immediately after cooking. It is a very fulfilling afternoon activity - to head out to harvest the flowers and head straight back to the kitchen and get frying. Though nothing can be done ahead of time, everything comes together very quickly and you will be eating these finger-licking good treats in no time.
Ingredients
Acacia flowers still on the stems
2 cups all-purpose flour
2 eggs
3/4 cup whole milk
2/3 cup beer
1/4 cup granulated sugar
1 tsp vanilla extract
1/2 tsp fine salt
2 1/2 cups oil, for frying the fritters | use vegetable or canola oil
For Serving
Powdered sugar for dusting
Honey for drizzling (a great time to try out this Fennel Seed Infused Honey)
Instructions
Step 1
Mix the flour, eggs, milk, beer, sugar, vanilla extract, and salt in a bowl until it becomes a well-incorporated smooth batter. Cover and set aside to rest at room temperature for one hour.
Step 2
Heat the oil in a deep pan.
Step 3
Once to oil is hot enough to fry, dip the flowers in the batter, carefully shake off any excess batter and fry in batches. Do not overcrowd the pan. Fry until the fritters become golden brown, approximately 2-3 minutes on each side.
Step 4
Carefully remove the fritters and leave them to drain on a paper towel.
Step 5
Dust lightly with powdered sugar. Drizzle the honey across the top. Serve while still hot. Enjoy.
