Blackberry Lime Cheesecake Popsicles

When the heat gets hot

Zingy, creamy, and cold - these popsicles hit the spot as the heat gets hot.


Ingredients

Blackberry Layer

2 cups blackberries

sugar | to taste

lime juice | to taste

Cheesecake Layer

1 cup labneh or cream cheese

5 tablespoons cream

2 tablespoons lime juice

1/2 teaspoon lime zest

1/2 cup powdered sugar


Instructions

Step One

Add the blackberries and lime juice to a medium saucepan. Cook over medium heat until the berries are easily broken with a spoon, about 10-15 minutes. Taste. Add sugar if needed and cook until dissolved.

Step Two

Pour the berry mixture into a blender, on very very low (you only want to break open the fruit, but not destroy the seeds) blend the mixture until you’ve broken up the fruit. Pour the mixture into a strainer and strain out the seeds. Set aside.

Step Three

Mix together all of the ingredients for the cheesecake layer until smooth. Taste. Adjust if needed.

Step Four

In your popsicle molds, alternate pouring the different layers of blackberry and cheesecake until the mold is full. Freeze until solid. Serve. Enjoy.
