Miso Roasted Japanese Turnips Recipe
If you can get your hands on the under-appreciated beauty that is the Japanese Turnip—run don’t walk. You can eat the entire plant, and it is absolutely delicious. Nothing like the “typical turnip”. These are soft and juicy and yet also crunchy. They can be eaten raw like an apple or cooked. These miso ones are particularly nice— salty, sweet, and juicy. Enjoy!
Ingredients
1 pound Japanese turnips | greens roughly chopped, the turnip itself sliced in half
2 tablespoons miso paste
2 tablespoons olive oil
1 pat of butter
Instructions
Step One
Preheat the oven to 425 degrees.
Step Two
Add the miso paste into a small bowl and slowly pour the olive oil on top while whisking.
Step Three
Toss the turnips in 3 tablespoons of the miso oil (reserving the other 1 tablespoon) and lay them out on a lined baking sheet. Roast in the oven for 14-16 minutes, flipping the turnips halfway through cooking.
Step Four
On the stovetop, take the reserved tablespoon of miso oil, add it to a skillet and toss in the greens. Saute the greens until wilted. Take the pan off the heat and add in the pat of butter, stirring it into the greens until it has melted, but don’t let it brown.
Step Five
Serve the roasted turnips on their bed of sauteed greens. Taste. Adjust any seasonings. Enjoy.
