Fermented Juniper Berry Juice

A refreshing fermented beverage from Sarajevo.


Ingredients

1/2 lemon | skin on, quartered

1 cup juniper berries

4 cups water


Instructions

Step One

In a 1-liter glass bottle or mason jar, add the lemon, juniper berries, and water. The water should go all the way to the top of the glass. Cover the top with the lid, but do not tighten.

Step Two

Leave the glass on the counter out of direct sunlight for 7-15 days depending on how strong you would like the flavor. Begin tasting on day 7.

Step Three

When you are pleased with the flavor of your ferment, strain the juice and transfer it to a new bottle. Store in the fridge. Enjoy.


A Note About Fermentation Process

During the fermentation process, the juniper berries will sink and float, and the water will turn a yellowish color. This is normal. If the juice starts to grow mold or has a very off smell, dispose of it and try again.
