Spicy & Sweet Pickled Rhubarb

For something a wee-bit different

Looking for something different to make with rhubarb? Try this! Spicy, sweet, and tangy - you can’t go wrong. Try adding these pickles to a salad, or cheese board. Use a splash of the pickling liquid in a cocktail. Play & have fun.


Ingredients

1 lb rhubarb | chopped

1 cup water

1 cup red wine vinegar

1 cup sugar

zest of 1/2 small orange

2 bay leaves

1/2 tsp black peppercorns

1½ tsp sea salt

1 tsp fresh ginger | sliced

sprig fresh thyme

3 dried chile peppers | adjust to taste

2 tablespoons chili flakes | adjust to taste

1 tsp mustard seeds
