Stir-Fried Pea Shoots Recipe
This dish cooks in under two minutes. It’s fantastic over a bed of rice with a fried egg.
Ingredients
1/2 pound pea shoots | tender tops of shoots and large leaves
1 tablespoon canola oil
4 cloves garlic | minced
1 teaspoon ginger | minced
1/2 tablespoon Shaoxing Wine or Soy Sauce
salt
Instructions
Step One
Separate the tougher stem from the tender tops of the pea shoots, making sure to only use the most tender tops and pull the larger sets of leaves off of the main stem. Discard the tougher stems.
Step Two
Heat the oil in a large nonstick pan or wok until just almost smoking. Add the garlic and ginger. Stirring constantly cook until the garlic turns golden.
Step Three
Add the pea shoots. Toss the greens well to coat. Pour in the shaoxing wine or soy sauce. Cook until the pea shoots are just withered. Taste. Adjust seasonings. Add salt if needed. Serve hot. Enjoy.
