Tomato, Green Bean, and Potato Pesto Salad Recipe
I so enjoy this summer salad. The key here is to make the crispy potatoes — I love how the potatoes stay crunchy even after being dressed.
Ingredients
Tomatoes | sliced in half
Green Beans | steamed until just cooked
Potatoes | see recipe here
Pesto | enough to coat see recipe here
Instructions
Step One
Right before you are ready to serve - toss all of the ingredients together in the pesto. Taste. Adjust any seasonings. Serve. Enjoy.
