Garlic and Herb Grilled Eggplant Recipe
The great thing about this recipe is it is so versatile. You can do this with the longer skinner eggplant (halved longways), or with the more round eggplant (just slice them into rounds). Comes together in a flash and is always a crowd pleaser.
Ingredients
2 large eggplants
2 teaspoons salt
1/2 cup olive oil
3 cloves garlic | crushed
a handful of fresh herbs | parsley and oregano. roughly chopped.

Instructions
Step One
Preheat the barbecue.
Step Two
Slice the eggplants into 1/4 inch thick slices and generously salt each side. Let rest for 15 minutes. Wipe each slice with a paper towel to remove the excess salt and moisture.
Step Three
In a large dish combine the olive oil, garlic, herbs, salt, and pepper. Dip each slice of eggplant into the oil mixture making sure each side is coated.
Step Four
Grill for approximately 6 minutes per side until golden in color with grill marks. Brush with more of the oil mixture if the eggplant starts to dry out or stick.
Step Five
Remove from the grill, and toss in the remaining oil mixture. Coat both sides and then transfer to your serving platter. Serve. Enjoy.
