Sautéed Sweet Potato Leaves

Wickedly nutritious, delicious, and comes together in a flash

So I realize not everyone has access to sweet potato leaves, BUT, if you do - consider yourself extremely lucky! If you can’t snag a bunch of these leaves - this recipe is also delicious with any hardy greens you have on hand—try this with kale, spinach, or any asian greens.


Ingredients

1 tablespoon olive oil

chili flakes | to your heat preference

4 garlic cloves | smashed

6 cups fresh sweet potato leaves

2 tablespoons lemon juice | freshly squeezed

salt and pepper


Instructions

Step One

Add the olive oil to a skillet over medium heat. Add the chili flakes and smashed garlic and cook until the garlic fragrant and golden, but not brown.

Step Two

Add the sweet potato leaves, and quickly sauté until they are wilted 1-2 minutes.

Step Three

Take the skillet off of the heat, add the lemon juice. Stir in. Taste. Season with salt and pepper. Enjoy.
