Texas Green Salsa

Creamy with surprising sweetness and a nice body of heat

Using the work “salsa” here as a more general heading of sauce. But man, this one surprised me. It tastes creamy, sweet, and then has that body of heat behind it. It gets better with time, so try and make this at least the day ahead.


Ingredients

Equal parts:

jalapenos | halved

onions | cut into large chunks

water

a handful of garlic cloves | peeled

a pinch of salt

a solid glug of neutral oil


Instructions

Step One

In a large pan over medium heat saute the onions with a little oil until translucent.

Step Two

Add the jalapenos to the pan and then add water until the onions and peppers are covered. Bring to a simmer and cook until the peppers are just about tender.

Step Three

Add the garlic to the pan. Continue simmering until the garlic is just soft.

Step Four

Strain the vegetables from the water. Discarding the water.

Step Five

Add the vegetables to a blender. Biltz until completely broken down. While the blender is still running, slowly pour the oil into the mixture until it is emulsified. Add a pinch of salt, then blend again. Taste. Adjust seasonings. Serve. Enjoy.
